A very traditional Swedish Thursday meal that I now eat whenever I feel like it is yellow pea soup, sometimes split and sometimes not, with onion and ham. I usually buy split peas because they don’t need to soak overnight. During my brief stint in the army, that’s what we had every Thursday for supper, followed by thin crêpe-like pancakes with strawberry jam, and maybe even whipped cream on top.
Here’s my recipe: Chop a medium yellow onion finely and sautée. Add 16 oz Goya split yellow peas, 6 cups water, 1 package diced ham. Boil until thick and mushy, more than 1 hour. Serve with spicy brown mustard in the bottom of the bowl. Stir and enjoy.

Wow! I was not expecting this. Yum! Mustard on the bottom, I would not have thought about doing that. Great idea! Just what the Doctor ordered! Ha!
